Who doesn’t like cookies? It’s probably one of the most popular sweet indulgences out there. One of the traditions in our home right at the onset of spring is baking a batch of these Orange Cloud Cookies. Its the best way to bring in the spring season.

These cookies are light and are bursting with the freshness of citrus flavor – just like spring! The first time I made this recipe, Roshan’s immediate reaction was “this is what I image a cloud would taste like”, hence it got the name cloud cookie.

Citrus zest is such a great ingredient to incorporate in recipes. Whether you use it in baking, in salad dressings or even in granola, just a little bit goes such a long way. It adds freshness to any recipe and really livens it up! Though the secret ingredient to this recipe is cream cheese. That is what makes these cookies so soft, moist and airy.

I assure you these cookies are not going to lie around your home for long. Bring them to a pot luck, for a tea party, or just keep a box hidden in your pantry – these cookies really hit the spot!

Orange Cloud Cookies

Yield 24-30 cookies

These cookies are fluffy soft clouds of zesty sweetness. They are crisp on the outside, airy on the inside and bursting with citrus flavors!

Ingredients

  • 2.5 cups all purpose flour
  • 3/4 cup cream cheese
  • 1/4 cup butter (1 stick)
  • 1 cup sugar
  • 3 tablespoon orange zest 
  • 1/4 cup orange juice
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon brown sugar for garnish (optional)

Instructions

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside. 
  2. In a small bowl mix the orange zest with the sugar. Use your fingers to mix it so that all the sugar gets coated in the citrus zest.
  3. In a large mixing bowl beat the cream cheese, butter, orange juice and the orange zest- sugar mixture for about 2 minutes, until it is fluffy. 
  4. Add the egg and slowly mix it in. 
  5. In a separate bowl mix all the dry ingredients- flour, baking powder and salt together. 
  6. Gradually incorporate the dry ingredients to the wet ingredients, while keeping the mixing speed low. 
  7. Drop the dough on the prepared baking sheet in tablespoon size rounds. Sprinkle a little amount of brown sugar on top of each dough ball. 
  8. Bake for about 12-14 minutes. The cookies will not change much of a color but the ends and bottom will start browning. 
  9. Remove from oven and the cookies completely cool down for about 4-5 minutes.

Parfaits are one of my favorite things to eat with a nice hot latte early morning. WAIT! Esha doesn’t drink coffee so you should know that the blog is being TAKEN OVER for this post and it’s Roshan in the pilot seat.

I still remember the first time Esha introduced me to this mixture of yogurt, granola, and blueberries on a flight to Paris and I turned to her and said “Wow! This is breakfast?!?” Needless to say, that trip changed breakfast forever for me.

Two years later, I still find myself changing things up and using strawberries, blueberries, blackberries, and even pomegranate (yes, pomegranate is amazing on a parfait)

From my experience of several hundred parfaits over the past few years, I’ve come to realize the perfect parfait consists of a few things:

  1. Ripe fruit – go to the market and buy the brightest, red strawberries or bluest blueberries, get the point? The riper and brighter the fruit, the tastier and sweeter your parfait will turn out.
  2. The perfect crunch – enter Granola! Esha has a terrific granola recipe coming up btw!
  3. A smooth finish – finding a consistency of yogurt here is just as important as the previous two. I personally like Chobani’s plain Greek yogurt with my parfait for its smooth texture and delicious taste! This might take some trial and error based on the consistency you prefer, but trust me, when you know – you know!

Mixed Berry Parfait

Yield 2 serving

Creamy, ripe, crunchy and absolutely delicious! Its great as a quick breakfast for a lazy weekend or a hurried weekday morning! It is "berry" good!!!

Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup mixed berries of your choice
  • 1/2 cup granola

Instructions

  1. Place 3 spoons of the yogurt.
  2. Add a layer of granola and then a layer of the berries. 
  3. Repeat with a layer of yogurt, granola and berries.
  4. Its ready to serve!
